Around the times of the fair, one vastly changing product in America was wheat. The many ways to employ the grain began to be showcased through the fair as we see an influx of many wheat products. The change in wheat use also shaped "American diet" as fiber, once rarely seen in custom U.S. meals, became more prevalent through such foods as shredded wheat.
